Otter Kitchens at California State University, Monterey Bay (CSUMB) offered students protein-packed choices to upgrade their nutritional intake on Oct. 14.
The FYUL (fuel for life on campus) event is part of a campaign that aims to teach students about functional foods with enhancing wellness benefits. During this all-day event, the FYUL foods took over the Rooted station in the Dining Commons at CSUMB, presenting Otters with two different options for lunch and dinner.
Lunch consisted of a sofritas black bean bowl. The sofritas were made from crumbled tofu, and braised in a chipotle and roasted poblano pepper broth. Complimentary on the side were black beans, red cabbage cilantro slaw and mashed sweet potatoes.
For dinner, students had the opportunity to indulge in warm quinoa and pepper salad – complete with roasted poblano peppers and onions.
These delectable, protein-filled meals aid in muscle growth and recovery, while supporting students’ health. Otter Kitchens will be giving away OSU mug cakes on Oct. 20 while supplies last, and hosting a Halloween drive-in lunch on Oct. 26 from 11 a.m. to 2 p.m.
